Torri Cantine harvest their grapes by hand between September 20th and September 30th from their old vineyards in Ancarano and Controguerra, which sit some 290 meters above sea level. Thanks to the terroir the grapes receive plenty of heat during the day and cooler air at night, which when coupled with Torri's organic methods enhances the typical flavours of the Pecorino grape.
