The name Baronerosso, or Red Barron, says it all about this semi-hard cheese made using raw goat’s milk: it’s majestic in appearance and bold in flavour.
Known as a drunken cheese the Baronerosso has been matured in crushed Barbera wine grapes and washed in Barbera d'Asti DOCG wine for a minimum of five months. It's the wine that gives this goat's milk cheese its deep purple edible rind.
Crumbly yet firm the Baronerosso has the typical mouthwatering tanginess of a cheese made from goat's milk. The Barbera grapes add a delicate aftertaste of wine and an aroma of sour cherries creating a beautifully balanced cheese.
This goat's milk cheese really makes an impact on both flavour and appearance.
