La Pruina harvests their grapes by hand. To make this rosé wine, La Pruina macerates their Negroamaro grapes for six to eight hours to extract the right colour tone and aromatics typical of the Negroamaro grape. Ageing takes place in stainless steel tanks for four to five months, followed by a further month in the bottle.
La Pruina, Puglia
The La Pruina vineyards sit in the heart of the Salento region in Puglia. Here the soils are calcareous, shallow, and rich in texture. They are notoriously low in nutrients so the vines are continually stressed leading the vine to concentrate all its efforts on the fruit. High average temperatures cause the grapes to slightly dehydrate, which results in grapes rich in colour and aromas.
Negroamaro is a grape that thrives in a hot climate. It's also high yielding so winemakers need to implement good vineyard management to reduce the yield and concentrate the flavours. Typical aromas of Negroamaro show red and black fruits and spices. Flavours of plum, cherry, and blackberry are characteristic of this grape. More complex expressions have notes of coffee, tobacco, liquorice, bitter chocolate, and an earthy quality.
