Cacc'e Mmitte di Lucera DOC, a blend of Nero di Troia (60%), Montepulciano (30%), and Bombino Bianco (10%), is the perfect marriage of traditional peasant winemaking processes and modern methods. This wine has a vibrant dark ruby red colour with an aroma of flowers, red currants, and raspberries. On the palate, Cacc'e Mmitte di Lucera DOC is full-bodied and bursting with cherry and plum, followed by hints of liquorice and wild Mediterranean meadows. Barrel ageing has produced well-balanced tannins giving this wine a surprisingly fresh finish.
Harvesting of the grapes is by hand in September for the Montepulciano and Bombino Bianco and in mid-October for the Nero di Troia. The grapes are macerated for 10 days to extract the aromas of the grapes. The wine undergoes a second fermentation, known as malolactic fermentation. This process transforms bitter malic acid, which exists in some grapes, into lactic acid, which is less bitter, making the wine softer. Before being released to the market the wine undergoes a period of six months ageing in barrique followed by eight months in the bottle.
Cantina La Marchesa, Puglia
Cantina La Marchese began life in 1988 when Marika and Sergio embarked on realising their dream of winemaking. Their vineyards span 15 hectares within 300 metres of their cellar. This proximity of the vineyards to the cellars allows them to move the grapes to the cellar very quickly after cutting, helping to preserve all the grape's aromas.
Cacc'e Mmitte di Lucera DOC is a small appellation whose viticultural zone is in the foothills of the southern Apennine mountains in the province of Foggia, Puglia. Established in 1975, Cacc'e Mmitte di Lucera DOC applies to red wines based on Nero di Troia. As of 2018, there were only 26 hectares of vineyards recorded for the appellation. Wines carrying this appellation must contain 35-60% Nero di Troia; 25-35% Malvasia Nera, Montepulciano, and/or Sangiovese; 15-30% Bombino Bianco, Malvasia Bianca, and/or Trebbiano, with a minimum alcohol content of 11.5%. The name Cacc'e Mmitte is unusual for a wine appellation. These words are Pugliese dialect meaning to expel ("cacc'e") and to fill ("mmitte"). It is thought this is a reference to the quick turnaround of tanks containing freshly pressed grape must in the rare farms which owned a wine press and allowed neighbouring farms to use it in quick succession during the harvest season.
