This is an excellent introduction to the appassimento style of winemaking and great value too. Azienda Agricola Le Torri's Appassimento is a luscious organic red made from 100% Primitivo. The grapes used to make this wine are left to dry before vinification (the appassimento method). The drying process concentrates the sugars and flavours of the grape resulting in a complex and smooth wine that boasts flavours of morello cherry, plum and subtle notes of vanilla and wood. On the palate, this wine is full-bodied with soft, round tannins and a smooth, velvety finish.
Primitivo is one of the most planted grapes in Puglia along with Nero di Troia and Negroamaro. The grape was first introduced to the region in the town of Gioia del Colle in the 18th century where it was cultivated by the priest Francesco Filippo Indellicati. It was Francesco that coined the name Primitivo, reflecting its early ripening nature - Primitivo roughly translates to first to ripen. Primitivo has been confirmed as being genetically identical to Zinfandel. Since this discovery, its popularity has been making a comeback. Primitivo is big and powerful, displaying flavours of raspberry, blackberry, cherry, and plum with spicy pepper notes.
