Once La Pruina has harvested their Primitivo grapes by hand, they are destemmed and crushed then transferred to temperature-controlled steel tanks where they undergo the first fermentation with maceration for eight to 10 days. After the first fermentation, the wine goes through malolactic fermentation to convert the bitter malic acids to more gentle lactic acids. Ageing takes place in second use American and French oak for 10-12 months.
La Pruina, Puglia
The La Pruina vineyards sit in the heart of the Salento region in Puglia. Here the soils are calcareous, shallow, and rich in texture. They are notoriously low in nutrients so the vines are continually stressed leading the vine to concentrate all its efforts on the fruit. High average temperatures cause the grapes to slightly dehydrate, which results in grapes rich in colour and aromas.
Primitivo is one of the most planted grapes in Puglia along with Nero di Troia and Negroamaro. The grape was first introduced to the region in the town of Gioia del Colle in the 18th century where it was cultivated by the priest Francesco Filippo Indellicati. It was Francesco that coined the name Primitivo, reflecting its early ripening nature - Primitivo roughly translates to first to ripen. Primitivo has been confirmed as being genetically identical to Zinfandel. Since this discovery, its popularity has been making a comeback. Primitivo is big and powerful, displaying flavours of raspberry, blackberry, cherry, and plum with spicy pepper notes.
Primitivo di Manduria DOC
Primitivo di Manduria DOC is an appellation in southern Puglia and is based on the Primitivo grape. Wines from this area are full-bodied and moderately tannic with a touch of sweetness. Wines can be made to either the rosso or riserva specifications. The wines must contain a minimum of 85% Primitivo with the remainder made up of any other approved red grape. For the rosso version, the minimum alcohol level is 13.5% and the wine must be aged for a minimum of five months. The riserva rules go a little further, requiring a minimum alcohol content of 14% plus ageing for a minimum of two years, of which nine months must be in oak.
