The Roma DOC appellation is one of Italy's newest, having been established in 2011. Despite this, it is rooted in ancient production techniques, dating back to the Roman Empire. Roma DOC by Cantina Gaffino is a sensational blend of Montepulciano, Sangiovese, and Petit Verdot. It is characterised by a complex bouquet, full body and round, velvety tannins. For maximum extraction, the grapes in Cantina Gaffino's Roma DOC are left to macerate for 12 hours. After this, the wine undergoes a long ageing process of 12 months in barrels followed by six months refining in the bottle.

Cantina Gaffino’s 28 hectares of vineyards are planted just a few miles south of Rome and located in a vantage area boasting volcanic soil and optimal altitude and exposure. The business has been family-run for almost 60 years. Throughout this time their focus has been in the vineyard, cultivating their vines to obtain the highest quality grapes.
Montepulciano is the second most widely planted grape in Italy. Wines from this grape are smooth and round with aromas of flowers, red berries, and herbs. Its flavour profile is plum, cherry, and raspberry with earthy and spicy notes.
The Sangiovese grape is the most widely planted red grape variety, particularly in central Italy, with 71,500 hectares under vine. Sangiovese is often referred to as the Tuscan grape. Wines made purely with Sangiovese tend to be light-bodied, high in acidity, fairly tannic with cherry, plum, dried herbs, and peppery notes. Savgiovese's natural characteristics make it incredibly suitable for oak ageing.
Petit Verdot is a lesser-known grape used in Bordeaux blends, and can also be found in many other winemaking countries. Very successful in dry, warm climates, Petit Verdot gives wines a deep ruby red colour, high tannins, and mature fruit and wildflower flavours.
