Only the best Grechetto, Procanico, and Chardonnay grapes of the harvest are used to make this wine. The musts of each grape are fermented separately in temperature-controlled stainless steel tanks. A small proportion of the Grechetto must is fermented in oak barrels to develop complexity and add fineness. The wine remains on the lees until it is bottled, create a more complex, soft, and rich wine.
Run by the Bonollo family, Argillae’s vineyards are set on the hills north of the town of Orvieto. The 38 hectares vineyards are planted on gentle hills and benefit from an east-west exposure. The soil in the area is made of clay, limestone and sand.
Grechetto is an indigenous grape only found in Italy and, more precisely, in Umbria and Emilia Romagna. Grechetto tends to produce light-bodied wines high in acidity and flavours and is an essential component of most Umbria DOC wines.
The Procanico grape, exclusively found in Umbria, is the clone of the more famous Trebbiano grape and is used in Orvieto blends. Trebbiano grapes, aka Ugni Blanc in France, are widely planted throughout Italy. Trebbiano wines tend to be light-bodied with high acidity and notes of citrus fruits and almonds. Often used in blends, Trebbiano can produce exceptional single varietal wines.
Chardonnay is arguably the most famous white wine grape in the world. Italian Chardonnays, specifically, are highly regarded and known for their dry but buttery notes. Highly versatile, Chardonnay can be used in blended wines or as a single varietal depending on the terroir where it is grown.
