Castello Carboncine's Carboncine Riserva Piave DOC is made on a small, ancient wine estate on the Venetian lagoon. It's aged for a minimum of five years in oak barrels followed by six months in the bottle before being released. Deep brick red in colour, this wine, a blend of Cabernet Sauvignon and Cabernet Franc, offers a bouquet of violets, wood, and red berries. Medium dry and full-bodied, Carboncine Riserva Piave DOC has a balanced sapidity with flavours of apples, red fruits, spices, and tobacco. Pair with roast meat, game, poultry, matured cheese, and dark chocolate. To appreciate the full flavours and complexity of this wine we recommend decanting at least an hour before drinking. Following the harvest, the grapes are fermented for 12 days in specially designed steel tanks that basculates to allow the maximum extraction of flavours from the grapes. The wine is then aged in oak barrels for five years and a further six months in bottle.

The Carboncine estate sits on an ancient site which, legend has it, used to be a stopover for the Templar Knights on their way to or from Venice. Castello Carboncine is run by sisters Isabella and Susanna, who are proudly continuing the traditional wine-making style of the Treviso area. Their passion and efforts culminated in securing the IGT Marca Trevigiana for most of their wines as well as one DOC.
Cabernet Sauvignon is arguably the most internationally acclaimed grape variety in the world. The Cabernet Sauvignon grape is a cross between Sauvignon Blanc and Cabernet Franc. The vines of this grape are highly adaptable to most soils and climates and maintain their key characteristics even in different terroirs. Cabernet Sauvignon wines are usually dark red with a fairly high tannin content and aromas of ripe dark fruit, spices and wood.
Cabernet Franc is an indigenous French red wine grape that was planted in Italy in the late 1800s. Widely planted in Friuli Venezia Giulia, Cabernet Franc wines are usually light-bodied and fragrant with notes of red fruit, herbs and underwood. Cabernet Franc, one of the parent grapes of Cabernet Sauvignon, is used either in single varietal wines or blends and has low tannins and good acidity.
